Pork Adobo (Pig's Feet)

Happy New Year everyone...

As the new year starts, the hubby started dominating the kitchen. For the weekend, we got this for lunch. Yay! Adobo na Tiil sang Baboy. It feels good to be not doing anything really.

I do not know the accurate measurements of the ingredients; so, experiment according to your taste. You can never go wrong with adobo after all.

Ingredients:

  • 1 Pork Feet (ask the vendor to slice it beforehand)
  • 4 cloves of garlic, crushed
  • 1 medium-sized onion, sliced
  • Ginger, sliced
  • Salt and Pepper
  • 1/4 cup Vinegar
  • 5 pcs calamansi, extract the juice
  • 1/2cup Soy Sauce
  • 1 tbsp Sugar
  • 1 tbsp oil
  • 3 pcs bay leaves
  • 6-10 cups water

Preparation:

For the amount of salt, pepper, sugar, vinegar, and soy sauce added, I am giving you free reign because it will ultimately depend on your taste.
  1. Heat oil in a pan.
  2. Sautee the garlic, onion, and ginger for 2 minutes.
  3. Add the pork, bay leaf, salt, and pepper.
  4. Stir every now and then until the pork turns slightly brown.
  5. Add the calamansi, vinegar, soy sauce and sugar.
  6. Stir sporadically for 5 minutes and add 3 cups of water and cover.
  7. Once it starts boiling, uncover and wait for the water to evaporate?
  8. Check if the meat is tender. If not add another 3 cups of water and simmer until tender.
  9. You can keep doing this until you are satisfied with the tenderness of the pork meat.
  10. Check the taste as well, if it's to your liking and adjust according to preference.

Serve with rice.
